Terroir and climate
The Commandery is the result of a blend of the best terroirs, all located on the 3rd terraces (High terrace of Mindel). These are thin soils of very old gravelly, clayey-siliceous alluvium.
winemaking
The harvest is sorted by hand and destemmed. Fermentation takes place at a temperature of 25 to 26 degrees. Extraction is carried out by punching down the cap. Maceration times are around 30 days.
breeding
The aging lasts at least 3 years before bottling. Half of the vintage is aged in barrels for 12 to 15 months. This technique produces wines whose woody notes, although present, do not dominate the fruit.
Tasting
The Commandery is characterized by its elegance and finesse. It develops a complex bouquet combining ripe fruits, violet, toasted and vanilla aromas. Its finesse allows it to be appreciated from the first years. For lovers of more mature wines, it will easily support a 15 to 20 year aging, or even more.
