High-flying
A natural wine with a deep color, Haute Voltige is all about fruit and flowers.
Grape variety
The wine comes from the vinification of Malbec to the exclusion of any other grape variety.
Terroir and climate
The average age of the vines is around 40 years.
The vineyard is entirely grassed and treatments are limited to the strict minimum.
winemaking and aging
Sulfite-free winemaking requires constant rigor, from harvest to bottling.
All the stages of winemaking have the common objective of favoring finesse and fruit while avoiding excessive extraction:
- The harvest is sorted by hand and completely destemmed.
- Macerations are of the order of 10 to 15 days and fermentation temperatures of the order of 24 to 25°C.
- Extraction is done by pressing down the cap of the marc (pigeage) and very light pumping over.
The wines are aged for around 6 months in vats before being bottled.
Tasting
The deep-colored wine develops aromas of red fruits and flowers.
The mouth is supple and balanced.
It will easily accompany grilled meat, a tagine or an Asian dish.
