Grape variety
The wine is made from two of the three grape varieties included in the Cahors appellation: Malbec: 80%; Merlot: 20%.
The grape varieties are vinified separately before being blended.
Terroir and climate
The vintage comes mainly from plots located on the 2nd terraces, old alluvium composed of sand and silt covering a layer of clayey-sandy pebbles.
The average age of the vines is around 40 years.
The vineyard is entirely grassed and treatments are limited to the strict minimum.
winemaking and aging
The harvest is sorted by hand and completely destemmed.
Macerations last around 10 days and fermentation temperatures are around 24 to 25°C.
Extraction is done by pressing down the cap of the marc (pigeage) and very light pumping over.
The wines are aged for around 6 months in vats before being bottled.
Tasting
The wine is light, sweet and fruity.
It can be served as an aperitif, with white meats or a light vegetable dish.
Red wine lovers can serve it with fish or seafood.
