Grape variety
The wine is made from the three grape varieties included in the Cahors appellation: Malbec: 75%; Merlot: 20%; Tannat: 5%.
The grape varieties are vinified separately before being blended.
The average age of the vines is around 40 years.
Terroir and climate
The vintage comes mainly from plots located on the 3rd terraces of the ancient Quaternary. These are very high-quality gravelly, clayey-siliceous soils.
The vineyard is entirely grassed and treatments are limited to the strict minimum.
winemaking and aging
All stages of winemaking have the common objective of favoring finesse and avoiding excessive extraction:
- The harvest is sorted by hand and completely destemmed.
- Macerations are of the order of 15 to 20 days and fermentation temperatures of the order of 25°C.
- Extraction is done by pressing down the cap of the marc (pigeage) and very light pumping over.
The wines are aged for about a year in vats before being bottled.
Tasting
The deep-coloured wine develops aromas of red fruits, violet and spices. The palate is generous and balanced.
It will easily accompany poultry or grilled meat. It can also be enjoyed with a vegetable dish such as a tian or baked eggplants.
Alcohol content: 13.5% vol.
